New Food Trucks Bring Flavor to Lincoln

LINCOLN — Bob Yang, a resident of Lincoln, recently launched his own food truck venture, Yummy Yang’s, in response to his longing for a local spot to indulge in Boba or bubble tea, without the hassle of a lengthy commute.

Tucked away at 1862 E. Pridemore, adjacent to the Appletown Store, Yummy Yang’s, owned by Bob and Cindy Yang, offers an enticing array of Asian cuisine alongside the popular Boba beverage, also known as bubble tea.

For the uninitiated, Boba is a Taiwanese concoction crafted from milk, teas, and fruit juices, paired with tapioca pearls for a delightful bubble-like texture, explains Yang. His personal favorite? The honeydew-flavored Boba.

Having spent years in Denver, Colorado, where Boba tea was easily accessible, the Yangs relocated to Lincoln four years ago to be closer to family in Westville, Okla. With Bob’s extensive background in the restaurant industry, Yummy Yang’s marks his maiden foray into entrepreneurship with a food truck.

In addition to Boba, Yummy Yang’s offers a tantalizing selection of Asian fare, curated to satisfy diverse palates.

Since its grand opening on March 21, Yummy Yang’s has experienced overwhelming support from the local community, often necessitating early closures due to high demand. Bob Yang expresses gratitude for the community’s enthusiasm and asks for patience as they navigate the ins and outs of food truck operations.

Operating hours for Yummy Yang’s are 12-6 p.m., Wednesday through Sunday, with closures on Monday and Tuesday.

Meanwhile, Tony’s Burgers and More, a beloved food truck mainstay in Lincoln, recently relocated to a new spot at 1108 E. Pridmore Drive, following the loss of its lease. The new location, dubbed the Wolf Den Food Court, promises to be a vibrant hub for food truck enthusiasts.

Under new ownership by Brent Coggins, Tony’s Burgers continues to serve up mouthwatering burgers, hot dogs, and other savory delights. Operating hours are 10 a.m. to 3 p.m., Monday through Wednesday, extending to 4 p.m. on Thursday, 6 p.m. on Friday, and concluding at 3 p.m. on Saturday.

Excitement is brewing in Lincoln’s culinary scene with plans underway to expand the food court, offering a diverse array of cuisines to delight discerning palates. Picnic tables adorn the transformed space, formerly a car wash, creating a welcoming ambiance for food truck aficionados to savor their favorite treats.
