Culinary Sensations: Unveiling Vietnam’s Epicurean Delights

As 2023 drew to a close, Vietnam experienced a culinary revolution marked by innovative and tantalizing dishes that left an indelible mark on the nation’s gastronomic landscape.

Coin-shaped Cakes Spark a Craze in Hanoi

Captivating the taste buds of Hanoi’s discerning food enthusiasts, coin-shaped cakes emerged as a focal point in online food review groups. Originating from Korea and Japan, these delectable treats, adorned with 10 won or 10 yen molds, boast a spongy crust imbued with the fragrances of egg and milk. Filled with mozzarella cheese, they quickly became a ubiquitous sight around school areas, offering an affordable indulgence priced at approximately VND35,000 ($1.40).

Hand-pounded Lime Tea: A Refreshing Revelation

2023 witnessed the introduction of hand-pounded lime tea in Hanoi, a trend that reached its zenith in October and November before permeating cities such as Ho Chi Minh City and Da Nang. Originating in China, this trendy beverage utilized specific regional limes, renowned for their unique aroma.

Beyond its refreshing taste, the allure of hand-pounded lime tea lies in its intriguing preparation process. Limes are meticulously hand-pounded to release essential oils, creating a symphony of flavors. The crushed limes, combined with sugar syrup, tea, and lime juice, produce a cool, sweet, and slightly sour concoction with a rich tea flavor. The distinct fragrance is owed to the use of these special Chinese limes.

Clay-pot Milk Tea: A Taste of Yunnan in Hanoi Streets

Originating from Yunnan, China, clay-pot milk tea emerged as the year-end sensation on the streets of Hanoi. Despite establishments popping up on thoroughfares like Hang Muoi, Ngo Tram, and Hang Chieu, they grappled with meeting the overwhelming demand, resulting in prolonged wait times for eager customers.

The clay-pot milk tea, a tantalizing blend of tea, herbs, dried red apples, sugar, fresh milk, and tea-marinated flowers, is meticulously crafted. Staff measure water, milk, and rock sugar before pouring them into clay pots. Herbal teas are added, and the mixture simmers for 4-5 minutes. As the clay pots sit directly on the stove, each accommodating four pots, the staff ensures perfection by gently stirring the brew. Once boiling, the aromatic milk tea is poured into cups for patrons to relish. Unlike traditional milk tea places, these establishments offer outdoor seating, allowing customers to savor the warmth of their cup amid the winter chill while immersing themselves in the bustling street scene.

Custard Apple Tea: A Summer Sensation Takes the Spotlight

As the year-end witnessed the ascendancy of hand-pounded lime tea and clay-pot milk tea, custard apple tea claimed the spotlight in the summer culinary scene. Originating in Ho Chi Minh City and nearby Long An Province in the Mekong Delta before spreading to Hanoi and Da Nang, this seasonal concoction caused a social media frenzy and frequently sold out on food delivery apps.

The preparation involves a tantalizing combination of jasmine tea, kumquat, sugar, and custard apple. Pieces of custard apple are soaked in sugar, and upon order, the owner adds squeezed kumquat to the cup, pours pre-made jasmine tea, tops it with custard apple, and expertly shakes it to create a delightful foam. This refreshing beverage, with the essence of jasmine, the tanginess of kumquat, and the sweetness of custard apple, is the perfect antidote for hot summer days.
